Bhutte Ka Khees - Madhya Pradesh

Today as part of Indian Food Odyssey, we go on a virtual tour to Madhya Pradesh. It is a state in central India. It is nicknamed as the heart of India due to its geographical location. It is the second largest state in the country. It shares its boundaries with uttar Pradesh, Chattisgarh, Maharashtra, Gujarath and Rajasthan. I selected Bhutte Ki Khees, a popular street food for this state. I read lots of recipes to know about the recipe. Every recipe was different and so I came up with a recipe of my own. I used sweet corn for preparation. If you are using the usual corn available, then you need to add some sugar to give the dish sweetness. Some recipes used milk for cooking the corn while some didn't. I chose to make it without milk. As sweet corn cooks faster than the regular corn, I didn't add milk. It turned out very tasty. Add a few drops of lemon juice to cut out the sweetness of corn. You would surely enjoy it...




Ingredients:
Corn-4 cobs
Oil-2 tsp
Green Chilly-3
Onion-1
Curry Leaves-2 sprigs
Mustard Seeds-1 tsp
Asafoetida-a pinch
Turmeric Powder-1/4 tsp
Red Chilly Powder-1/2 tsp
Salt-to taste
Lemon Juice-3 tbs
Coriander Leaves For Garnish
Grated Coconut For Garnish

Procedure:
1. Grate the corns in a grater.
2. Heat oil and add mustard seeds.
3. Add asafoetida and curry leaves.
4. Add chopped onions and green chillies and saute until golden.
5. Add turmeric and red chilly powders, salt and grated corn.
6. Saute on low flame.
7. Cover and cook until the corn is completely cooked.
8. Mix in the lemon juice and coriander leaves.
9. Seve hot garnished with coconut and coriander leaves.



Take 4 corn on cob.



Grate all the corn.



Saute onions and green chillies.



Add the powders, salt and corn.



Cook until done.

Serve Hot...
