Dhuska - Jharkand

When I was in school, there were only 26 states in India. But now it is 28. Jharkand is one such state which came into existence during 2000 and it was carved out of Bihar. It is one of the western stateds of India. Jharkand shares it borders with Odisha, West Bengal, Bihar, Chattisgarh and Uttar Pradesh. As it was part of Bihar, it has some influences in Jahrkand's cuisine also. Dhuska is one of the snacks of Jharkand which is prepared during festivals. Serve it with a simple aloo sabzi and it would make a wonderful combination. It tasted so much like the bonda we prepare and only the shape was flat. I served it with alu tomato sabzi but for me it tasted good without any accompaniment. The actual recipe didn't have coriander leaves, but I don't know where I got the idea, I added some chopped leaves to it. So it looks different from the original.

Ingredients:
Rice-1 cup
Channa Dhal- 1 cup
Ginger-1/2" piece
Green Chilly-2
Turmeric Powder1/4 tsp
Salt-to taste
Oil-For Deep Frying

Procedure:
1. Soak rice and dhal for 8 hours.
2. Grind it to a smooth paste with ginger, green chilly and cumin.
3. Add salt and turmeric powder to the batter.
4. The batter should be littlethinner than the dosa batter consistency.
5. Heat oil in a pan, pour ladle full of batter into hot oil and fry both sides until golden.
6. Drain oil and serve hot.



Prepare batter.



Drop ladle full of batter into oil.



It will form a flat cake.



Fry until golden.



Remove from oil.



Serbve hot...
